What is a good 3″+ EDC knife?
Like the title says, I’m looking for a good EDC blade that has at least 3″ plain edged blade. My price range is ~$60-$70 (willing to go higher if it is very well worth it).

You didn’t say whether you wanted a fixed blade of a folder. I’m assuming you’re referring to folding knives,correct?
So, as far as the folders go in that price range, Kershaw knives are hard to beat.
For 75$ you can get either CPM S110V folder or ZDP-189 folder. Both are on top of the super steel list today.
Not that easy to sharpen either one of them, but nothing too complicated either.
For any model they produce you can also go with more conventional steels like Sandvik 13C26. Very nice, fine grained steel, takes a good edge. Those cost around 50$ or even less.

Also, fit and finish of Kershaws are unbelievably good for the knives in that price ranges. They easily put to shame bunch of other, more expensive folders.
Benchmades also have several very good folders in your price range.
I never liked spydercos, too weird looking, but that’s another very solid company with very good products.

SOG Vulcan itself is an ok knife, but not worth the the price. VG-10 steel is a good one, but far from CPM-110V and ZDP-189 Kershaw offers. Plus Zytel handles are not really top notch in terms of durability. It tends to deform and separate from handle slabs due to temperature changes. Plus the bare metal sticking out at the handle butt tends to bit in your palms if you’re using significant force.
As for the stainless vs. Carbon steels. Neither term is correct if you want to be precise. All steels are carbon steels, otherwise it wouldn’t be a steel to begin with.
No steel is stainless, at least not the ones that can be used in knives, they are stain resistant to various degree.
Carbon steel is the one which has very low or no stain resistance. But they(good ones) hold sharper and better edge compared to stain resistant(14% or more Chromium) ones.
Modern stainless steels aren’t that far behind from carbon steels. And in humid environments Stainless steels have the advantage, as the edge will degrade very quickly due to the rusting.
